The item you need is Hardwood. It’s a common resource. You can buy it from towns and sometimes raid it from enemies or Caravans. It’s relatively cheap and is the primary method of obtaining Charcoal. When you visit a town select the trade option then buy the Hardwood. It costs 2 Hardwood to make 1 Charcoal.
The easiest way to boost your castles is to have a governor that has good steward but there are also other bonuses like production, loyalty, etc. you can see what the bonuses are when you hover over the choices. Be careful with the governors culture too because that will affect the loyalty if they are a mismatch. 2. Add gold to the stock. Here are perks that benefit construction speed in 1.5.6: Steward - Forced Labor perk also gives +10% Construction (not quite sure how this is calculated), Steward - Relocation perk adds +20% to the project boost via money. (60x1.2=72) Steward - Contracors perk might also be helpful. But in 1.5.6 it is not implemented.

Early on your main disadvantage vs. other lords is pretty much that you don't have any influence, which you need to get a fief (unless you are lucky and everyone votes vor you). As far as i can tell the possible candidates for a new fief are based on: - participation during the siege.

Telling horse archers to skirmish usually works for me, once they've killed about a dozen that's when they'll lose patience and just charge at you. For me they always charge me. On topic: No idea, but maybe there is in the formation menu. Not all the units would probably do a shield wall. Sturgians for sure.
